- 8 chicken thigh fillets boneless, skinless, cut into quarters
- 3 tsp chipotle chillies in adobo sauce
- 1 tbsp sweet paprika
- ¼ tsp sea salt
- ¼ tsp ground black pepper
- 400 g can black beans drained and rinsed
- fresh coriander leaves only, to garnish
- 4 tbsp sour cream to serve
- 1 lime cut into wedges, to serve
