- 1 lime zest only, no white pith
- 1 - 1 ½ fresh red chillies deseeded if preferred, to taste
- 1 garlic clove
- ½ tsp ground black pepper
- 2 cm piece fresh ginger peeled
- 20 g lime juice
- 3 sprigs fresh mint leaves only
- 3 sprigs fresh coriander leaves and roots only
- 80 g fresh pineapple cut into pieces
- 70 g tomato
- 20 g honey
- 20 g tamari
- 1 pinch sea salt
Rice paper rolls
- 100 g carrot cut into quarters
- 1 red apple cored and cut into halves
- 180 g red cabbage cut into pieces (6-8 cm)
- 8 sprigs fresh coriander stalks only, leaves reserved
- 2 tbsp roasted salted peanuts
- 1 avocado flesh only
- 2 - 3 pinches salt
- 2 - 3 pinches ground black pepper
- 10 rice paper roll wrappers (see Tips)
- ½ yellow peach stone removed and flesh cut into thin slices
- 2 sprigs fresh mint leaves only
- 1 Lebanese cucumber peeled into ribbons
