- 40 g fresh basil leaves only (approx. 8 large sprigs)

- 30 g walnuts

- 2 garlic cloves
- 1 avocado flesh only
- ½ tsp salt
- 2 tbsp lemon juice
- 30 g extra virgin olive oil
Assembly
- 30 g broccoli broken into small florets
- 4 - 5 marinated artichoke hearts cut into halves
- 10 pitted green olives cut into halves
- 1 spring onion/shallot cut into thin slices
- 1 tbsp pine nuts
- 6 slices vegan mozzarella (approx. 40 g - see Tips)
